A Very Basic Introduction
Coeliac disease occurs when a person has an adverse reaction to gluten, which can present itself in many diferent ways such as lethargy, stunted growth in children, weight loss, abdonminal pain, and a host of many other symptoms. Gluten itself is a protein found in wheat, barley or rye and can be found in pasta, bread, sauces, ready meals, and of course, cakes. When someone is diagnosed with this disease they have to radically change their diet and cut out or substitute a lot of basic, regular foods. This change in diet can be a very depressing time, which is where we hope to come in, by providing cakes and sweet treats that anyone can eat, coeliac or not.
